A ripe pumpkin has a hard rind you can't dent with a fingernail and a dry, corky, curled stem — a green, flexible stem means it's not ready. Thump it and listen for a hollow sound. Cut rather than pull, leaving several centimetres of stem attached, since a torn stem lets rot set in early. Keep pumpkins dry and out of direct sun on the trip home. Stored somewhere cool and dry, whole pumpkins with intact stems will typically keep for one to three months.
